- Asian Soup
- 1 quart chicken broth
- Bamboo shoot chunks
- Baby corn
- 1/2 can whole water chestnuts
- Small fresh chantrelles
- Snow peas
- Sliced green onion
- Minced ginger & garlic
Bring broth to a simmer, add ginger & garlic, bamboo shoots, corn, water chestnuts, & salt. Just before serving, add snow peas and green onion. Finish with a drizzle of peanut oil & serve. - Shitake Beef
- Re-hydrate Dried Shitake
- Marinate beef in sambal, mushroom soy, ginger, garlic, sesame oil
- Grill trimmed green onions
- Trim stems from shitake
- Halve/quarter shitake & toss with soy, peanut oil, sesame oil, green onion, sesame seeds.
- Grill steak, rest, & slice
- Border plates with 2 green onions
- Plate shitake between onions on one side of plate
- Plate steak on remaining portion of plate
